[Easy asian noodle recipe-Vegetarian] Glass noodle salad

Hi there🙋🏻‍♀️I’m Jean-The last person on earth that would want to spend time in Kitchen
So if I can nail this Super delicious Glass Noodle salad (approved by my picky bf), you can too!
I’m going to share this super easy Asian glass noodle recipe that you would be glad I did, for the upcoming Summer!

How I came across this recipe

Some short stories first. My bf is usually the one going for grocery shopping, and that day he came back with this “Rice vinegar” (apparently, those days I was craving food from my country so I was using a lot of Soy sauce and sesame oil, he thought that rice vinegar could substitute the Mirin I wanted ).
When I see the Rice vinegar…tbh, the last thing I want to do in quarantine is to make Sushi😅… so I searched for recipes to make this Rice vinegar useful~and here I am!

Why you should try Glass noodle Salad

  • Fast and Easy to prepare
  • You will love it for summer times
  • Super light, guilty free to feel very full from it
    (Glass noodles which are made from green beans are very light and low in calory)
  •  Cruelty-free! It’s vegetarian!!

So if you want to try something different, maybe Meatless Monday or Foreign cuisine Tuesday(💁🏻‍♀️made this up myself), isn’t this the best option?

Glass noodle salad Ingredients


  • Glass noodle 100g (per bowl)
  • Carrot (this size will be enough  for 2 bowls)
  • Cucumber (1/bowl)
  • 2 Eggs
Wet ingredients
  • Soy sauce 2.5 tbsp
  • Sesame oil 2 tbsp (toasted one, the color should be darker)
  • Sugar (1 tsp)
  • Rice vinegar 2 tbsp (Here comes our main character😂)
  • Salt

*Extra tip about Sesame oil


If you are a fan of Chinese food, sesame oil stands a very important role for us! For its unique smell and we especially love it during the wintertime, using it for hot soup noodle, it warms you up immediately!
(Another tip: add 1 or 2 tbsp of toasted sesame oil in Miso soup, it brings the soup to another new level!)

Keep in mind that not all sesame oils are the same, remember to buy toasted one which you can find in the picture, It shall be darker in color. The right one is also sesame oil but not toasted, it smells nothing special…so it’s useless here…I heard Japanese use them to bake bread though.

You can usually find toasted sesame oil in Chinese supermarkets (You could find them in regular supermarkets in Asia, I suppose)

Let’s start to make Glass noodle salad



Boil glass noodle

Check the package for how long your glass noodle should be boiled. Boil it for exactly that time and immediately put it under running cold water for 5~7 minutes until your noodles are cold thoroughly. Just leave it there and let the water drain.
Before mixing them with the sauce, cut them shorter.


Shred Carrot and Cucumber

Shred Carrot and Cucumber with a grater.
Boil Carrot for 2 minutes then immediately soak it in salted ice water.
After shredding, put cucumber directly in salted ice water.
(to make them crunchy)

蛋皮怎麼做Make egg wrap

Crack the eggs, add a little bit salt and milk then mix all of them.
Fry it in a pan with the smallest fire. Remember that it has to be THIN!


When you are done, just wrap it and put it aside.

Mix all wet ingredients together

  • sesame oil
  • soy sauce
  • rice vinegar
  • a little bit of salt
  • sugar

Add noodles and all toppings

Remember to mix well before you eat.
